Buckwheat Recipe

By Sarah Pachev

This buckwheat recipe is Sasha's favorite pre-race meal. He discovered pasta was not healthy for him, so he eats whole grains. Russians eat cooked buckwheat a lot. This recipe, however, varies from the traditional Russian version to eliminate unhealthy grease. It also uses spices uncommon in Russia:

  • 4 cups water
  • 1 cup buckwheat
  • 2 tbs olive oil
  • 2 tbs Braggs Aminos
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder (or fresh garlic)
  • onion to taste

Bring the water to boiling. Add everything else. Cook until the water is gone and the buckwheat is big and fluffy. This is good with salad garnishings on top or with beans, chicken or just about anything you like.
