Strawberry Pie

This strawberry pie recipe is perfect when strawberries come out in the spring. My kids and I sing a song: "Strawberry pie, strawberry pie - if I don't get some I think I'm going to die. Take away the green grass, take away the blue sky. If I don't get my strawberry pie."

  • 1 quart strawberries
  • 1 cup crystalized fructose
  • 2 cups water
  • 3 Tbs cornstarch

Wash, drain and hull stawberries. For glaze, simmer 1 cup of the berries with 2/3 cup of water until berries start to break up. Blend fructose, cornstarch and remaining 1/3 cup water. Stir into boiling glaze mixture. boil 1 min longer, stirring constantly. Let Cool. Pour remaining 3 cups of fresh berries into a baked pie shell. Try The Easy Pie Crust. Pour glaze over the berries. This pie is to die for. Served with a healthy whipped topping of your choice if desired.
