Cabbage-Cauliflower Soup Recipe

Note-I nickname this soup "Ground Hog Soup" on Ground Hog's Day because all the ingredients come from the ground. 

  • 8-10 cups water
  • 4 medium potatoes
  • 1/4 cup cauliflower
  • 1/4 cup cabbage
  • 2 carrots
  • salt and pepper to taste
  • 1 tsp favorite spice (oregano, thyme, or combination like Mrs. Dash)
  • a sprinkling of fresh parsley

Bring water to boiling in a large saucepan

While waiting for the water to boil chop up all the vegetables according to your preference. If you like chunky soup make it larger or dice smaller for bite size pieces.

Simmer all ingredients except parsley on medium heat for 20-25 minutes or until biggest pieces are tender.

Enjoy with garlic bread or sprinkle cheese on top.
