Quick Salmon Soup Recipe

  • 1 pound Salmon
  • 5-6 medium red potatoes
  • 1 medium onion
  • Salt and pepper to taste
  • 1 T olive oil
  • 8 cups water


Put water in large saucepan and bring to boiling.

While wating for water peel and slice the potatoes into thin slices across the entire potato (so they turn out looking like potato chips). Dice the onion and cut the salmon into thick chunks.

Add the all the ingredients to the water. Because salmon cooks quickly and the potatoes are sliced thinly this cooks up in a whip...maybe 10-15 minutes. Just watch for the salmon to turn that nice pink color and cut a chunk open to see if it's done.

I concocted this recipe when we were staying at a Marriot Residence Inn in Mil Pitas, CA. Sasha was really sick and didn't feel like going out(not that he likes to anyway but we do sometimes on vacation).

I prepared this soup with so much love and a little bit of intuition and it was DELICIOUS. I hope you enjoy it to...try feeding it to a sick friend or loved one who loves salmon.
