Easy French Toast Recipe

My mom made the most wonderful french toast when I was a kid. Here is my healthier version.


  • 8 pieces whole wheat bread
  • 1 1/2 cups soy milk
  • 2 eggs
  •  1 t vanilla
  • 2 t cinnamon

Whisk together milk, eggs, vanilla and cinnamon in a shallow baking pan. Heat frying pan on medium heat until water jumps off of it (that means it's hot).

Place 2-4 pieces of bread in milk solution (depending on how many will fit..how big your pan is)

Soak both sides and then place on frying pan. Cook on each side of bread until firm on both sides (about 2-3 minutes each) Continue soaking and cooking until all bread is gone.

 Serve with pure maple syrup or your favorite all fruit jam spread. Smuckers sells a great all fruit spread at Wal-mart for about $1.50 a jar-my favorite.
