Fourth of July Pancake Recipe

Sift together:

  • 1 1/4 cup whole wheat flour
  • 1 T baking powder
  • 1 t salt

Combine:

  • 1 cup milk or soymilk
  • 2 T light tasting olive oil

Add wet ingredients to dry ingredients. Bake on hot griddle or frying pan. Makes 8 four inch pancakes. Can be easily doubled or tripled. Add fresh blueberries, strawberries and a dollop of cottage cheese for a fun Fourth of July breakfast.
